Whites and knives profile - Nick Allen Head Chef

When Phil Dougherty and Nick Allen met over an informal drink 2-and-a-half years ago their shared experience brought together two lifetimes of hospitality and catering experience.  Luckily for us the meeting formed a company - Dougherty & Allen - which in 2 years has blossomed into a highly regarded catering and event consultancy business. 

Nick was formerly Executive Chef of the Dorchester Collection, who specialised in delivering bespoke menus to their private-dining clients. He always thought he’d be an architect but when he had to cover his sister’s kp shift at the local pub he was hooked on the culinary world.

He started at the Hare & Hounds, Bidborough, Kent at 13 and by 16 was running the kitchen.  At 17 he left home and went to work at the Dorchester. Several years later, he gained qualifications through Thames Valley as part of his development with the Dorchester Collection.

After rising to the position of Junior Sous Chef, he was then asked to open Coworth Park, a legendary fixture of the Michelin restaurant scene.  Within its first year, under the guidance of John Campbell, Coworth Park was awarded a Michelin star.

At Coworth, Nick developed further skills by developing a team, menus, kitchen, supplier relationships etc. For a full year ahead of the opening Nick had to plan and develop all areas of the kitchen.  For his troubles, he was nominated for the Personality Award an annual prize awarded to just one person working within the 10,000 plus strong family of workers in the Dorchester Collection.

His time with the Dorchester Collection infused his evident skill and passion with a knowledge of multiple cuisines and techniques.  And it is this blend, that added to Phil's sommelier experience and Kristine's meticulous event planning that have shaped Dougherty & Allen, allowing them to soon expand out of "The Tardis" unit in Saltney.
